Waterfront Bistro is a family owned business operating for over 20 years in Darwin, and has been employing Apprentices throughout this time. Waterfront Bistro takes their food seriously, in fact they have won or placed runner-up in some of the Northern Territory's most prestigious hospitality awards.

Peter Lay, Owner of Waterfront Bistro also has three Chefs working under him, all of whom have been put through an Apprenticeship and completed successfully.

“The best thing about having Apprentices is that I can teach to suit the businesses needs and train our Apprentices to fulfil Waterfront Bistro’s traditions and expectations, I have a fantastic team who enjoy their work,”

says Peter.

“The flexibility of CDU is a huge advantage to my business and the fact that CDU have a campus in Darwin is also an advantage as they get to live local, work local and train local,” says Peter.

“It’s easy with Australian Apprenticeships NT here, I know I can always call on Leonie Cornell, our Australian Apprenticeships NT Field Officer, Leonie is always available for me and my Apprentices,” says Peter.

Waterfront Bistro currently have two Australian Apprentices and will always be willing to train
more. Apprentice Chef Kevin Khun who is due for completion early 2015 decided to follow in
his family’s footsteps to become a chef when he was 16. He practiced at his parents Ocean
Fresh eatery on Darwin’s Stokes Hill Wharf.

Alongside Kevin, works Apprentice Chef Courtney Cameron who is also due for completion early 2015. Courtney has always had a passion for cooking and her dream is to continue in the profession overseas working in the high class restaurants of New York.

Both Kevin and Courtney also won the 2013 Nestle Golden Chefs Hat Award.

Peter is passionate about the Hospitality Industry and will continue to train to help the industry’s sustainability. Waterfront Bistro employs and trains Apprentices for the passion of the job and the boosting of the Commercial Cookery industry in Darwin.
